This coffee comes through our friends at Cultivar. We bought two lots this year from Cultivar, one fully washed and a Natural. We start with this beautiful washed coffee grown by Milton Rojas Fernandez in Colesay, where the cool temperatures at night draw out all the flavors out of the bourbon cherry. Expect notes of white grape and red apple, with a sweet sugary mouthfeel.
Milton Rojas grew up in a coffee farming family. His two-hectare farm, called Los Varejones, is located in a high-altitude region where cooler temperatures and rainfall extend the drying process—often taking around 15 to 16 days. Milton grows the Bourbon variety and follows a precise fermentation method: first fermenting the cherries for 48 hours, then depulping and fermenting the parchment coffee for an additional 32 hours.
Because of the farm’s climate, drying can be challenging, but Milton treasures the natural beauty of his land, which also includes bananas, yucca, and native shade trees such as cedro (cedar) and guava. Coffee is his family’s main source of income, and between harvests, he focuses on pruning shade trees and maintaining the farm.
Looking ahead, Milton dreams of building a cozy country home surrounded by diverse plants and a flourishing reforested area. He is proactive in combating common challenges like la broca (coffee borer beetle) and la arroya (coffee leaf rust) by using traps and exploring more resistant varieties.
Milton tells Cultivar that he values his partnership for the commitment of purchasing high-quality coffee and respecting farmers. When company representatives visited his community of Cala Higuera, they mutually shared insights on specialty coffee production, reinforcing Milton’s trust in a collaboration. For him, coffee isn’t just a livelihood—it’s a way of life and a family legacy he hopes to keep alive for generations to come.
