Our second offering from two Lord Voldemort lots. Deiro Garcia is a big fan of the Harry Potter series, so he named his farm after the character. Chiroso was thought of being a mutation but is actually an Ethiopian landrace. Its characteristics are complex, floral, citric and delicate. Expect juicy flavors like peaches and plums, vanilla crème brulee and a sweet delicate aftertaste.
Deiro Garcia is one of the most innovative growers in Pitalito, Huila, and since he is a great fan of Harry Potter, he named it Lord Voldemort.
Deiro has been working with coffee processing for more than 3 years, experimenting with fermentations and reproduction of his own bacteria and yeasts, beneficial to coffee processing. Originally thought to be a mutation of a Caturra, the Chiroso (after genetic testing) turns out to an Ethiopian landrace. This also shows in the elongated shape of its beans, and its characteristics in the cup: complex, floral, citric, delicate. It requires a lot of care and fertilisation to grow well, but has great productivity.
Extra care was taken in processing this coffee, in order to maintain and underline its special profile. The ripe cherries are harvested and floated to eliminate impurities. The cherries are then kept in tanks for 36 hours (without water) and then pulped and fermented in the same tanks, adding microorganisms cultivated with the same cherry for another 36 hours. It is then dried on parabolic dryers for 15 days.
